Taro

Introduction

*Taro is the edible root (anatomically corm) of the plant Colocasia esculenta.

*The outer skin is brown in color with tiny roots all over, and the inner flesh is white to creamy white in color with a slightly slimy texture.

*The size varies from small (about 1-2 inches) to medium to very large (as large as 5-6 inches).

*Raw taro contains a toxic substance called calcium oxalate, which causes itchiness to the tongue among other side effect. Steeping these in cold water overnight removes this substance into the water, which is later discarded before cooking. Hence raw taro is inedible.

*Taro is generally used in savory dishes and can be steamed, boiled, stewed, curried and fried

*Buying and storage: Select taro that is fresh, healthy-looking and plump without any bruises or soft spots. Store them in a well-ventilated place of the cupboard in a cool dry place away from heat and light.

Health Benefits

1. Taro is a food rich in carbohydrates and dietary fiber that also provides a moderate amount of protein and absolutely no fats and cholesterol.

2. Very good source of dietary fiber. Contrary to the popular notion, beans have more fiber than most fruits and vegetables. It is a good source of both soluble and insoluble dietary fiber.

3. Good source of Vitamin E and selenium, which are natural antioxidants that scavenge the free radicals that oxidize fats, preserves the integrity of cell membranes, and protects our body.

4. Good source of Vitamin C, a natural water soluble antioxidant. It enhances the body's immune system, increases the elasticity of skin and blood vessels, and prevents bruising of the skin.

5. Good source of Vitamin B6, which helps in the synthesis of antibodies in the immune system apart from red blood formation, protein metabolism and functioning of the central nervous system.

6. Good source of copper and manganese, which reduce the risk of inflammatory diseases, enhance the activity of certain enzymes and also play a role in detoxification reactions.

7. Moderate source of magnesium. It helps in relieving fatigue, relaxing the muscles, nerves and blood vessels, thus relieving the symptoms of asthma, migraine headaches, tension and soreness in muscles etc.

8. Good source of potassium, which is important for active muscles and nerves.

9. Very good source of phytochemicals that have many beneficial health effects.
