Potato

Introduction

*Potato is the tuberous root of the plant Solanum tubarosum.

*They grow under the soil, and hence have an outer skin covered with soil.

*The outer skin has tiny indentations called ‘eyes’ from where new sprouts come up to grow into new plants.

*The inner flesh can be waxy or starchy, and is white to creamy white to yellow in color depending on the variety.

*Some of the most common varieties of potatoes include Russet, Desiree, Yukon Gold, Kipfler, Red Pontiac, etc.

*Potatoes are used in the preparation of alcoholic beverages like vodka.

*Buying and storage: Select potatoes that are fresh, healthy-looking and plump without any wrinkles, bruises, soft spots, or leaking. Store them in a well ventilated part of the cupboard in a cool dry place away from heat and light.

1. Potatoes are a food rich in carbohydrates and dietary fiber that also provides a moderate amount of protein and potatoes as such do not provide any fats and cholesterol.
