Soybean Oil

Introduction

*Soybean oil is edible vegetable oil extracted from soybeans and is very popular all over the world.

*It has a light color and neutral taste and does not impart any color or flavor to the foods cooked.

*It is a liquid at room temperature.

*Has a high smoking point of 440 F and so is suitable for high heat cooking like deep frying.

*Soybean oil is low in saturated fats and high in unsaturated fats, especially essential fatty acids, linoleic acid (Ω-6) and alpha-linolenic acid (Ω-3).

*Excellent natural source of vitamin E.

*It is used in cooking, salad dressings, frozen foods, mayonnaise, non-dairy products and commercially baked products.

*Soybeans contain harmful substances like phytic acid, trypsin inhibitors, hemagglutin, but they are not present in soybean oil.

*People allergic to soybeans have an extreme allergic reaction to foods containing soybeans, like urticaria, rash, and itchiness on skin. This is due to a protein allergen present in soybeans. Soybean oil does not have any proteins, so consuming soybean oil does not cause any allergic reaction in people allergic to soybeans.

Is it raw?

No. Soybeans are heat processed during extraction and refining of soybean oil. Make sure you read the label.

Health Benefits

1. Soybean oil is low in saturated fats and high in unsaturated fats, especially essential fatty acids, linoleic acid (Ω-6) and alpha-linolenic acid (Ω-3) and so is good for the heart.

2. Helps lower the LDL cholesterol and total cholesterol and increase the HDL cholesterol in the blood, which reduces the risk of heart disease and cancers.

3. Has 7% of the omega-3 fatty acid, alpha-linolenic acid, and 50% of the omega-6 fatty acid, linoleic acid, both of which are essential fatty acids and are the precursors of prostaglandins, the hormone like substances that have a variety of functions in the human body like contraction and relaxation of smooth muscles, contraction and dilation of the blood vessels, controls blood pressure, reducing pain and inflammation etc.

4. Omega-3 fatty acids promote a healthy heart, reduce hypertension, reduce the risk of autoimmune diseases and cancers, act as a blood thinner and prevent the formation of clots and improve depression.

5. Naturally rich in vitamin E, an antioxidant that helps to remove the harmful free radicals from the body and maintains the integrity of cell membrane.

6. Also has high amount of vitamin K, which prevents internal and external bleeding.

7. Has no cholesterol as in other plant oils.

8. Good source of phytosterols, the plant compounds which act as antioxidants along with vitamin E in fighting against free radicals.
