Pumpkin Seeds

Introduction

*Pumpkin seeds are seeds of pumpkins, but are also used interchangeably with seeds of squash, cucumber and cantaloupe.

*They are a healthy and tasty snack that can be eaten on their own or in salads and are rich in essential fats, minerals and protein.

*They are also known as pepitas.

*They are flat, dark green seeds encased in a yellow-white husk.

*They have a sweet nutty taste.

*Although it can be eaten raw, dry roasting at a low temperature helps preserve the healthy oils present in them.

*When buying, select dry, whole (not shriveled) healthy seeds and store them in a clean, dry, airtight containers in a clean dry place, preferably in the refrigerator.

*If they turn brown on prolonged storing, they are not to be eaten as they are rancid. As with any other foods, they are best eaten when they are raw.

Are they raw?

Yes and No.
*Yes, if picked fresh or if it says raw or sundried on the package.
*No, because sometimes pumpkin seeds at the supermarkets are roasted and salted. Make sure you read the label.

Health Benefits

1. Pumpkin seeds have a high content of mono and polyunsaturated fats, which are very good for the heart.

2. Rich sources of protein and low in carbohydrates, so they are good for people with diabetes.

3. Good sources of anti-inflammatory nutrients like monounsaturated fats, folate and zinc that play an important role in reducing the inflammatory symptoms in arthritis without any side effects.

4. Excellent source of minerals like zinc, that helps in improving the prostate health and lowering the risk of prostate cancer or BPH. Zinc also quickens wound healing and enhances immunity.

5. Excellent source of minerals like iron, magnesium, phosphorus, copper, manganese, which are very useful in maintaining good bone density, muscle activity, hemoglobin in blood and other metabolic activities.

6. Good source of vitamin K, which helps in coagulation of blood.

7. Moderate source of B group vitamins, which enhance the production of energy and vitamins A & C, which enhance the eye sight and immunity.

8. Reduces osteoporosis and increases the bone density in older people.

9. Naturally, free of cholesterol and trans fats and low in sodium, so it is very good for people with heart diseases and hypertension. 10. They also have antihelminthic properties, so they are a natural way to get rid of worms.
