Bee Pollen: Bee pollen packs a load of nutrition in a small package. Pollen can provide the following nutritional support:

If you've never eaten bee pollen before, test it out for sensitivity. If you’re extremely sensitive to bee stings, you may have a reaction when it gets into your system. Try just a small amount and be prepared to take an antihistamine in case you do get a strong reaction and go to the emergency room if you find yourself in respiratory distress. If you don't have a reaction, try a little more the next day, increasing how much you’re getting up to a teaspoonful. If you haven't reacted after five days, you are probably not going to have a problem with it.

Spinach: I don't know why the cartoonist chose spinach for Popeye's health food, but he was far ahead of his time. We now know that it protects from osteoporosis, heart disease, colon cancer, arthritis, and other disease. It's truly a super food and should be included liberally in the diets of all raw-foodists.

Beets: Not only are they sweeter than many other vegetables, they are very flavorful. Nutritionally, they’re much like spinach. It's one of the best sources for folate and betaine, which work together to lower hemocysteine levels, an inflammatory agent that damages arteries and increases heart disease. Besides, they are powerful cancer fighters. You can grate beets and eat them in a salad; you can also eat the leaves and stems, which are also packed with vitamins, minerals, and antioxidants.

Cabbage: One of the so-called crucifers, this one is loaded with important nutrients such a sulforaphane, which increases your body's production of enzymes that disarm the free radicals that damage your cells.

Guava: This tropical fruit not only tastes good, it's healthy. It has the highest concentration of lycopene–an antioxidant that fights prostate cancer–of any plant food, even tomatoes and watermelon, noted for high levels of this substance. It's high in potassium and is the ultimate high-fiber food.

Use almonds, and you get a high-protein ingredient without adding any cholesterol. Also, almonds are a powerful antioxidant. They provide a good supply of phosphorus, good for bones and teeth. They are also higher in calcium than all other nuts. For expectant mothers, almonds are important because their high folic acid content. Macadamia nuts add an interesting and satisfying flavor to your granola and are highly nutritious. They have the highest amount of beneficial monosaturated facts of any nut.

Broccoli Sprouts: Including broccoli sprouts in your diet has been shown to reduce the risk of breast and colon cancer. Research studies have also shown that they are an anti-bacterial agent against Helicobacter pylori, the organism that is purported to cause stomach ulcers. But in the May 10, 2004, edition of Time, a study was published that linked the eating of broccoli sprouts with a reduction in stroke, high blood pressure, and cardiovascular disease. A ten-year series of studies on the cancer-fighting possibilities of broccoli has been going on at Johns Hopkins University conducted by Dr. Paul Talalay and his colleagues. They discovered that sulforaphane can trigger the production of phase II enzymes, which can detoxify cancer-causing chemicals. These may be the most potent anti-cancer compounds known. And guess what–they come from the lowly broccoli! Nothing exotic–just plain old broccoli.

Blueberries: Researchers have shown that a serving of blueberries provides more antioxidants than most other fresh fruits and vegetables. These help protect the body against free radicals and the chronic diseases associated with the aging process. In a study conducted by the USDA, neuroscientists discovered that if laboratory rats ate blueberries, age-related loss in mental capacity was slowed. In another study conducted under the auspices of the USDA, a researcher found that mice eating the equivalent for humans of one cup of blueberries a day performed better than those in the control group in learning and memory; he also noticed that they tended to be more exploratory. In examining their brains, he discovered a marked decrease in the effects of oxidation in two regions of the brain. Make certain to include blueberries in your raw foods diet. A cup a day is a good rule of thumb.

Vegetable Juice: This is a good way to get many of your vegetables. Include tomatoes and you get a good dose of lycopene, an antioxidant that is believed to reduce the risk of heart attack, prostate cancer, and other types of cancer. If you get your vegetables in a juice, your system will absorb more of the nutrients and absorb them more quickly. Of course fresh is the way to go. Already bottled vegetable juice contains all kinds of preservatives but still it is a step up from soda!
