Penne with Avocado Pesto Sauce
SERVES 2 ~ CALORIES PER SERVING: 305

Ingredients

“Spaghetti”

4 zucchinis or cucumbers

Avocado pesto sauce

2 medium sized avocados pitted, peeled and cubed
4 tbsp olive oil
2 cups fresh basil
4 tbsp pine nuts
2 garlic cloves (grated)
8 tbsp water (if the consistency isnt smooth enough)
2 medium sized tomatoes
2 tbsp fresh rosemary
Sea salt & freshly ground black pepper to taste


Method

"Penne Pasta "

Cut the ends of the zucchinis or cucumbers and peel
(optional). Cut them so they look like penne pasta (on diagonal) and set
aside.

"Avocado pesto sauce"

1. Blend pitted, peeled, and cubed avocados with cold pressed olive
oil, fresh basil. Add water (if needed) and grated garlic cloves until the
mixture is smooth.

2. Mix, in a bowl, tomatoes with rosemary, sea salt and black pepper to
taste.

3. Divide the penne equally into two bowls. Add avocado pesto sauce and
garnish with diced tomato mix, pine nuts and basil flower.
